If you’re anything like me, you’re a busy mum, running around doing errands, looking after your kids, keeping on top of the house and making sure your family are fed and watered.
It’s hard, tiring work and come the weekend you want to be able to relax as much as possible. You don’t want to be slaving away in the kitchen cooking for longer than you have to, but you don’t want to compromise on the health benefits and flavour of your meals either. So this is where the #MeatMatters challenge comes in.
Simply Beef & Lamb, along with BritMums have challenged us, mums and dads, to come up with a quick and easy Beef or Lamb dish that the whole family can enjoy. It’s a no-brainer that Beef and lamb are naturally rich in protein, each filled to the brim with essential vitamins and minerals that support good health and well-being. I decided to try it out for our laid back Saturday night dinner. I went and a bit of back and forth with my meat selection, but ultimately chose Beef Medallion Steaks. These are just so versatile and you can make loads of different delicious dishes with them. But more important than that, they are FAST! I’m a mum to a special needs little boy and trust me when I say that there aren’t enough hours in the day or eyes in my head to watch over him. Timing is quite simply everything!
So to go along with the Beef Medallion Steaks, I bought:
- a small Sourdough Loaf,
- Mixed Salad Leaves,
- and Reduced Fat Cheese
The end goal… A healthy alternative to a Steak Sandwich with
Let me tell you how I did it
Season your steak medallions with garlic salt & pepper on both sides and place in the heated pan.
Allow the steak to sear on each side and cook for as long as you like it. We prefer medium rare in our house but cook it however you please. Most important however is allowing it to rest once you’ve cooked it.
Once rested, slice up your meat, remembering to remove any excess fat from the meat. Then it’s onto the next step, preparing all of the accompaniments.
Using the same pan, add peppers to the steak juices and fry until slightly charred. It only takes a minute or so, but it’s well worth doing as you get all the flavours of the steak and deglaze the pan at the same time.
That’s it for the cooking portion… All done… in less than 10 minutes!
Now onto the rest of the prep, starting with the avocado. Run a knife laterally along the avocado until the knife scores meet. Then twist each end until it opens and you’re left with half in each hand. Take that same knife and chop into the large pit so as to trap the knife blade inside it. Then gently tug the knife so that the pit comes out. Use a tablespoon to scoop out each half of the avocado and slice/ chop/ mush… Whatever you prefer!
Next up is the thing that brings your sandwich together (quite literally)… the bread!
Using a good sharp bread knife, cut some slices of your sourdough loaf.
Then it’s just last minute prep like chopping/ slicing your cheese and cucumber and washing your salad leaves.
Next up is putting everything together and finally sitting down to enjoy all of your hard work. Less than 30 minutes from the fridge to the table. That’s pretty amazing for a meat-eaters dinner and despite it being a healthier option for a weekend meal, steak always feels like a treat in this house so it’s a win-win, healthy and delicious!
